Because my angel is sleeping, I wanted to share our journey with you. </p>
<p dir="ltr">In July 2013 we started infertility treatments after 11 months of trying to get pregnant on our own. Dr. Harper ran several blood tests and I was diagnosed with having an ovulatory dysfunction. We tried 3 different pills to get me to the point of ovulation and it took 6 weeks. Crazy huh? After that first cycle and no pregnancy, Dr. Harper wanted me to start injections. I remember being terrified walking into Huntsville Hospital to purchase the vials and not knowing how much we were going to pay. As Chris and I were walking out I remember looking at him and crying. We were walking out of the hospital with $1600 worth of medicine that would only last a month. The plus? We only paid $160. That night I cried again. I was breaking down because I was scared of giving myself a shot in the tummy. My patients won't think twice when I have to give them shots but I break down (what was going through my head.) </p>
<p dir="ltr">The shots continued and still no pregnancy. In November, I went back to HH again. Not to purchase medication but for an HSG (they inject dye into your cervix and it spills out of the fallopian tubes. If there is a blockage it opens it and usually you get pregnant quicker.) We ended up having the egg and sperm meet, but they didn't implant. Most women have this happen and they don't know but because of the fertility monitoring we knew. It killed me and satan attacked harder. Chris kept reminding me of the promises God had given us. In December we tried the first iui (intrauterine insemination.) Basically how it works is I continue the shots until by blood work and ultrasound I'm favorable for ovulation. Then I do another shot to trigger ovulation and we perform the procedure ($300.) You then wait 2 weeks and take a test. It's nerve-wracking. December and January resulted in negative tests. February was our last scheduled iui. If we weren't pregnant, we were going to meet with Dr. Harper and talk about more advanced measures. Chris was leaving for San Francisco for a week at the end of that month too. </p>
<p dir="ltr">I begged Chris to let us stop. I couldn't take it anymore. No more shots or disappontment. We even started looking through adoption agencies to decide where we wanted to begin. I'm so thankful that my husband is the incredible leader of our house that he is. He wouldn't let us stop. He never gave up hope. The iui was scheduled for the 26th of February.  My 24th birthday was the 23rd. Do you know what happened? I got pregnant before the iui. </p>
<p dir="ltr">My lab work was soaring each time it was taken. We were told to expect multiples at 4 1/2 weeks pregnant. At 6 weeks, we had our first ultrasound and at 7 weeks we heard Isaiah's heartbeat for the first time. All I could do each time was cry. My promise was being fulfilled. </p>
<p dir="ltr">Now we have a perfect 3 week old little boy whom we love dearly. He is already so strong and determined. We can't wait to see what God does in his precious life. </p>
<p dir="ltr">Infertility is not the path I would have chosen but now it's one I'm very thankful for. It strengthened my relationship with God and our marriage. It taught me to have more grace with those that didn't understand and said something I took personally. I learned that I wasn't a failure. God doesn't make those. I'm the daughter of the king. </p>

My sweet Nanny always gives the best gifts. What could be better than an Amazon gift card, right? I had no idea what I wanted this year, but there were 3 KP songs that I just loved. My CD came in Thursday afternoon. I couldn't wait for my ride to work Friday morning to be able to listen to it. Little did I know what would happen in less than 12 hours. I know that some of you know that Chris and I are going to a reproductive endocrinologist because of issues I have with getting pregnant. I was supposed to take a test this coming Monday, but needless to say, that is no longer necessary. As I walked to the garage yesterday for work,my walk was not the happy one I thought it was going to be. Instead it was filled with me fighting tears and praying to God to give me strength to get me through the day and still be a great nurse to my patients.<br />
<br />
The first song on the CD just happens to be "Roar." This is where God stepped in. Thank you, Father, for reminding me how beautiful Your promises are! With every storm you face, satan tries to come in and lie to you, and he knows exactly what to say to punch you in the stomach, make you hide away from the world, steal your joy, take your hope, but it is ALL A LIE!<br />

I am finished being silent. Satan is going to hear me roar. My God loves me so much, and He knows how much of a camel I am that He showed me something. I haven't share this with many people, but I'm going to.<br />

Chris and I met with Dr. Harper June 27th for our consultation. At this point, I was lifting a little weight (more body weight stuff than anything) and I was running really well again. I was told that I was no longer able to do that anymore. Basically all I could do was walk and swim. Test #1 from God, and I've made it. So, to get to my point...go ahead and get your tissues...A beautiful morning in July, I was walking the neighborhood and something incredible happened. God gave me my first ever vision. I was looking through my eyes and I was immediately on 5th floor at Decatur General surrounded by my old Women and Children co-workers. I didn't see a lot of faces, but I did see one- Chris N, our LPN, who had told me later that she had a dream about me that I'll share later. Chris N came up and I saw her touch my pregnant belly. After that I just saw hands keep coming up and touching my abdomen and I could feel love and joy. When the vision ended and I was looking back at the house at the end of the road, I was crying and in shock. I called my precious husband and immediately explained everything and asked how I knew the difference between a vision and me just wanting something so badly that I made myself see it. It was backed up in the Word.<br />
<br />
Weeks after this dream, Chris N came to work and told me that she had had a dream about me. She was holding my firstborn, a daughter. Now it gets better, 2 weeks ago she came to me with another dream about me- boy/girl twins. So for all that follow me on Pinterest and saw all of those pins, this is why.<br />
<br />
I don't blame God for this and I'm not mad at Him. That doesn't mean that sometimes I don't stomp my foot because I don't understand, because I do, but I don't think that I would have all of this happen if He wasn't trying to comfort me and show me His love and promise for me. I cannot wait to share with you all that we're parents, and I know deep down that it's coming. Not by adopting or fostering, but my having a child(ren) grow inside me, and I can't tell you how excited I am for my new home (Labor and Delivery) to be there with Chris and me the day for them to come into the world.<br />

Whatever you're facing, I know that God has GREAT, incredible, wonderful, tremendous plans for you. He turns the most awful things into something beautiful. The storms that we face make us stronger each and every day. They help us to deepen our roots into His word and truth. Can you believe that October is almost over?? I feel like yesterday was New Year's. October has been a great month. The weather was perfect. I am LOVING being in Labor and Delivery/C-Section team. Chris and I were able to go see my fam jam and walk around the quad at UA. Fertility is moving along. No positive tests yet, but God is faithful :)<br />

ANYWAYS....onto the reason for the blog.....Chris and I lead a Lifegroup on Thursdays called "Before I do." My director is incredible and allowed me to be off on Thursdays so that I could attend. Well, since I'm off why wouldn't I cook dinner for my precious couples, right? For the past 6 weeks, I made 5 meals that I have made before and one week one of the couples made homemade spaghetti. It was incredible!!<br />

Last Thursday, I couldn't think of what I wanted to make, but I knew I wanted to do something that I hadn't made before. Where did I search? Pinterest of course!!<br />

I came across the recipe for the Crock pot Chicken and Dumplings <a href="http://www.bubblecrumb.com/2010/02/14/crock-pot-chicken-and-dumplings-recipe/" target="_blank">here</a> on Bubblecrumb's blog.<br />

VERY easy! Are you ready?<br />
<br />
Ingredients:<br />
4-6 boneless, skinless chicken breasts<br />
2 cans cream of chicken soup<br />
2 TBSP butter<br />
1 can of chicken broth(I used 1 cup of the chicken broth that I had in stock)<br />
1 onion diced(I used minced onion)<br />
1 TBSP dried Parsley<br />
4 Grands flaky biscuits<br />

Place the chicken in the bottom of the Crock pot. Put the butter on top. Next, put the 2 cans of soup, broth,onion, and parsley in a bowl and mix together. Pour over chicken and cook on high for 4 hours. After the time is up, take the chicken out and shred it. Once shredded, put chicken back into Crock pot and stir. Cut each biscuit into 9-10 pieces and put into Crock pot and stir. Crock pot needs to be on high for another 30 minutes. After the time has elapsed, it is time for dinner!!<br />

We fed 6 adults comfortably with this recipe, and I have to admit, I wanted to make it again the next night.<br />

From the title, you would think that you would be getting tips on how to have a hot body. What it really talked about was blessings and tips to accept them. One of them was to stop wallowing in the pity and another was listening to lies. When satan comes in like a lion looking for prey, he spares nothing.  We are so much bigger than our fears and failures because God is on our side. Brothers and sisters, do not let your joy be stolen. </p>
<p dir=ltr>In life, we will have joys and sadness, but all of these are blessings. Chris said to me one time,"Instead of asking God why? Ask what? What are you trying to show me? What are you trying to teach me?" </p>

I know I do! I am an icing queen. My husband, not so much. Another quality in our relationship that I love so much. I get ALL of the icing, and he can have the cake.<br />

I recently started making my own cake recently. Vanilla is all that I have progressed to, but if it's what people are happy with, why change?<br />
<br />
Cake:<br />
2 sticks unsalted butter<br />
1 cup sugar<br />
4 large eggs<br />
1 tbsp vanilla<br />
3 cups flour<br />
1/4 tsp salt <br />
1 tsp baking powder<br />
3/4 cup heavy cream w/ 1/2 cup water<br />
<br />
Mix butter and sugar together on medium until fluffy. Then, add eggs and vanilla. In a separate bowl, add the flour, salt, and baking powder together. Next, add 1/2 flour mixture. After that is thoroughly mixed, add in the heavy cream, then the last 1/2 of the flour mixture. Grease 2 cake pans, and separate the batter evenly.<br />
<br />
<br />
Bake on 350 for 25-30 minutes or until a toothpick is removed clean.<br />
<br />
Cool, remove from pans, and ice!<br />
<br />
Here's the buttercream recipe:<br />
2 sticks butter, softened<br />
1 tsp vanilla<br />
1-2 tbsp cream<br />
4-5 cups powdered sugar<br />
<br />
Whip butter on medium until fluffy. Then add the vanilla and cream. Once mixed, cup by cup add the powdered sugar. <br />

They are great before a workout to provide extra energy and control blood sugar. I just happen to be really picky with my bananas. I prefer to have them more on the green side. Chris likes his more ripe. So when they become extra ripe, what else to do than make banana bread?<br />

I found a recipe last year that I used to make banana bread. Chris and I were looking for a healthier recipe, and we found one using applesauce. A huge thank you to <a href="http://www.mythoughtsforthought.com/2013/05/easy-banana-bread.html" target="_blank">My Thoughts for Thought</a> for this recipe:<br />

Ingredients:<br />
3 Bananas<br />
1 Cup of Sugar<br />
2 Eggs<br />
1/2 Cup of Applesauce<br />
2 Cups of Flour<br />
1 TSP of Baking Soda<br />
1/2 TSP of Salt<br />
<br />
Preheat oven to 350 degrees. In one bowl, mash bananas, and then add the sugar, eggs, and applesauce. In a separate bowl, mix the flour, salt, and baking soda. Slowly mix the dry ingredients into the wet ones. Once thoroughly mixed, pour into 2 greased bread pans. Bake for 55-60 minutes or until a toothpick is removed clean.<br />

How cute is this! I am still in love after having it almost 2 weeks. The utensils were not on sale that week, but I got a huge deal on the picture. It was originally around $80.<br />

With the 4th of July just a couple days away from that shopping trip, I knew I was about to spend more money(which I do best) on ingredients to use to make something yummy for a family cookout. What better than a red,white, and blue cake?<br />
<br />
Here we go!<br />
<br />
For the cake:<br />
White or French Vanilla cake mix(I used #2)<br />
plus all the ingredients on the box<br />
red and blue food coloring<br />
<br />
Preheat oven to 325 and grease 2 cake pans.<br />
Mix cake mix, eggs, oil, and water on medium for 2 minutes.<br />
Split batter between 3 bowls.<br />
Mix 1/3 with several drops of red food coloring until desired shade of red is reached.<br />
Repeat another 1/3 with the blue food coloring.<br />
Leave the last 1/3 batter white.<br />

Now the tedious part. You will need 3 teaspoons. To make the zebra stripe print in the cake, you cake 2 teaspoons of one color batter and place it in the middle of the cake pan. Then, add 2 teaspoons of another color in the center of the first color. You alternate each color and continue this process until the batter is even in both pans. Basically it looks like layered circles. Bake your 2 cake pans for around 28 minutes or until a toothpick is inserted in the middle and removed clean. Remove from pans and allow to cool.<br />

For my homemade buttercream icing<br />
2 sticks butter softened<br />
1 tsp vanilla<br />
1-2 tbsp whipping cream<br />
4-5 cups powdered sugar<br />

*Red and Blue food coloring to tint icing*<br />

Whip butter until fluffy.<br />
Add in the vanilla and 1 tbsp whipping cream.<br />
Next add in cup by cup of powdered sugar.<br />
Between cup 2 and 3, add in another tbsp whipping cream.<br />
Separate icing into thirds.<br />
Tint icing with food coloring just like we did the cake batter.<br />

I used Wilton piping bags and the big circle tip(because my star tip magically disappeared) to pipe the icing onto the cake.<br />

Also, today the girls wanted to do a salad/casserole day at work. Since I didn't work, I still agreed to make something. The question was what to make. I knew I had chocolate chunks, giant marshmallows, and Oreos, so as my mind continued to run all I really needed was graham crackers. Chris could totally get those on his way home, right? Right!<br />

Ingredients:<br />
Crushed graham crackers(I used a sleeve and a half)<br />
Marshmallows<br />
1 bag chocolate chunk chips<br />
Oreos<br />
Sprinkles<br />
1/2 cup butter melted<br />

Now, remember that you can be creative with this. You don't have to follow my recipe exactly. Have fun with it!<br />
I used a disposable metal pan for this. Preheat oven to 350. Crush graham crackers and place in bottom of pan. Then, pour melted butter over and mix into the crumbs to create a crust. Place Oreos on top. Then, cut marshallows in thirds and spread across Oreos. Top with the chocolate chunks, and lastly, cut more marshmallows in half and spread them across the chocolate chunks. Toss sprinkles over the top and bake for 10-12 minutes. Then turn on the broiler for 30 seconds to turn the marshmallows golden.<br />

This week I got to make a new recipe, and I have to admit I was pretty nervous about it. I am such a perfectionist, and so when I agreed to make a cake for our charge nurse's surprise baby shower, I knew I had to make something impressive, tasty, and it had to be perfect. Originally, I had seen a pin on Pinterest of making cake balls, and then baking them in cake batter. When you cut the cake, you would see different colored balls. But I had a change of heart on Tuesday(2 days before the shower). I had also seen a post somewhere of making a zebra stripe or rainbow layer cake.<br />

I searched the internet, and it turns out that it is really easy to make. Are you ready?<br />
<br />
Ingredients for the cake:<br />
1 box white cake mix(I used vanilla) & ingredients used to make it<br />
<br />
Make cake mix according to box. Now, since I wanted to do white and baby blue I halved my batter, but if you want to do more colors separate the batter based on how many different colors you want to use. Spray your cake rounds with non-stick spray and then flour the inside of them.<br />
<br />
This next process will take a while, but it is worth it for the outcome. Take 2 tbsp of the first color and put it in the middle of the cake rounds. Next, place 2 tbsp of the next color in the center of the first color. Keep the process going until you are out of batter. This process took me about 35 minutes, and the batter will eventually spread out over the entire bottom of the baking rounds.<br />

This is how your cake will look when you finish laying the batter. Bake the cake according to box directions. Mine was perfect at 28 minutes at 350 degrees. Remove cakes from pans and allow to cool completely. While it is cooling, you will have time to make your frosting.<br />

Ingredients for homemade buttercream icing:<br />
2 sticks butter softened<br />
1 tsp vanilla<br />
1-2 tbsp heavy whipping cream<br />
3-4 cups powdered sugar<br />
<br />
Mix butter on medium until it is whipped and fluffy. Next add vanilla and 1 tbsp whipping cream. After mixing thoroughly, add cup by cup of powdered sugar until you are satisfied with the texture. I added another tbsp of whipping cream between cups 3 and 4 to thin the icing out just a tad. Now you are ready to frost!<br />

After frosting the cake, I had more icing left over, so I added blue food coloring until I was satisfied with the color. Then I used my Wilton decorating tips and bag to add the finishing touches.<br />

I was very pleased with the outcome, and I was praying that it was going to be delicious the next day.<br />

I put the cake in the refrigerator overnight, and at 0640, the cake was in the Women's and Children's classroom ready for our surprise later that day. Our charge nurse was back from her ultrasound about 12, and the floor was buzzing with excitement. We enjoyed a nice lunch with homemade salsa, buffalo chicken dip, fruit, cocktail weenies, croissants, homemade chicken salad, homemade dessert tortilla chips, fresh punch, and probably a couple of other items I can't remember. Our expectant mother was showered with lots of adorable gifts and love from fellow employees, and we were all excited to be a part of her big day. Now all we have to do is wait for our little love to arrive!<br />

Chris and I lead a Supper Club lifegroup on Wednesday nights. One of the ladies that comes made this delicious cake. Last night after I got off of work, we were meeting at Connie and Johnny's house. While the men talked about fishing, the ladies discussed recipes. I HAD to have the coconut recipe, and Connie spilled the beans!! The secret: letting the cake sit overnight. So of course Chris had to take me to Publix to get the ingredients to make it last night. No I did not stay up all night making a cake :D<br />

Ingredients:<br />
1 box cake mix(Connie used Funfetti the first time. I decided to have a coconut overload. So coconut was my pick). You also need all the ingredients to make the cake<br />
1 larger can of cream of coconut. I believe its $2.69 at Publix<br />
1 medium sized Cool Whip thawed<br />
Shredded coconut<br />

Preheat oven and prepare cake batter according to box. Bake cake. As soon as the cake is complete, pour the can of cream of coconut on top. Let this soak up all night. Spread cool whip over entire cake. I had about a 1/4 inch layer. Sprinkle as much shredded coconut on top as your heart desires.<br />

Hopefully good news coming from an OBGYN appt on Friday(I have a follow-up on the 23rd. It's always been a dream of mine to be a mom and we're having some issues. I hope to find out what those are when I go back.) After the appointment was over and I had lots of blood drawn, Chris whisked me away to Chattanooga for a weekend getaway. When we got there Friday afternoon, we checked into our bed and breakfast, <a href="http://www.gardenwalkinn.com/" target="_blank">The Garden Walk Inn</a>. After getting settled, we headed to Ruby Falls. The exhibit was okay. Both of us agreed, the best parts were learning about the history of it and seeing the actual waterfall. My goodness, it was gorgeous!<br />

Before we left on the trip, I researched places to eat. One of the places I came across was <a href="http://www.acropolisgrill.com/" target="_blank">The Acropolis Grill</a>. They bring you fresh bread and homemade cinnamon butter to begin with. I ordered their Caesar salad with homemade dressing, and Chris had their potato soup. For the entree, I had their Farmer's Pie. He had their lamb gyros. Both were delicious! I could eat there every single meal. Dessert was a little different. I had their sugar free Strawberry Patch cake, and Chris had their Tiramisu. His dessert had too much coffee on top. It was definitely not the best one we have ever had. If that was the only bad thing-who cares.<br />
<br />
Saturday morning we woke up in time for breakfast which included bacon, cinnamon chocolate chip pancakes, orange juice, and coffee. One word to describe it: heavenly. The room was full of windows and you could watch the squirrels in the garden, observe the beautiful flowers and greens, and admire the vintage furniture. The owners came by the tables and made sure that you were thoroughly taken care of and satisfied. With breakfast as good as that, how can you not be :) After breakfast, we headed into downtown to the Tennessee Aquarium. I knew that it was voted one of the best, so I was super excited! We went through it in about 3 hours, and it was a lot of fun. We both love to learn and observe, so it was like nerd heaven. Outside of the aquarium, there were lots of venders. We had to get goodies to bring home. I am so excited to wear my new badge holder to work tomorrow!! Across the street from the aquarium is Ben and Jerry's. Being an ice cream lover and ALWAYS having it in my freezer growing up, we had to go. The girl behind the counter was awesome! She explained all of the flavors to us, and let us try a sample before choosing anything. It's the little things that make me happy :) After that we went back up Lookout Mountain to Rock City. I was a little unsure. What's so cool about rocks? Boy was I wrong! The scenery was beautiful, and the designers were very creative in the landscaping. We went to Lover's Leap and learned about it's history. Basically it was a Romeo and Juliet story with 2 Native Americans. In one of the trails, there was Fairyland Caverns, and it was full of black lights with sculptures of Mother Goose tales. It was very cool! We had free wine tasting later in our journey through, and Chris got a new leather hat. He's stoked about it.<br />
<br />
For dinner, we went to Sing It or Wing It. The menu items are named after famous singers. I thought it was precious. Before 9PM, any age can be in there. If you want to sing karaoke, you pick a song from the binder, give it and your name to the dj, and when its your turn, rock it out. Chris and I didn't sing, but we had so much fun watching everyone else. An older woman got up there and sang Prince's song "You Don't Have to be Rich." Of course she danced with it too, and she was amazing!! I hope after we left she sang more. We went back to Acropolis just to get dessert to go(they have a dessert fridge in the front of the restaurant) and came back to the bed and breakfast. Sunday morning, we got showered and packed and headed to breakfast for the last time. This time, we had a peach french toast bake and sausage. It was slap yo' momma good! I hated to leave, but we had so much fun. I am definitely married to an incredible man. He planned all of this and did an amazing job. I love investing in our marriage.<br />

I had an off day yesterday, and while trying to plan meals, I came across stuffed sweet potatoes. There's the new staple in your kitchen.<br />

Ingredients:<br />
4 medium sized sweet potatoes<br />
1 can black beans washed and drained<br />
1 cup corn-I used fresh corn that I cut off of the cob(4 half ears)<br />
pepper<br />
paprika<br />
cayenne pepper<br />
parsley<br />
cheese<br />

Preheat oven to 450 degrees. Wash potatoes and with a knife, poke small holes. Place on baking sheet and bake in oven for an hour. While they are baking, wash and drain the black beans and put them in a mixing bowl. Next, place paper towels in your microwave and put the corn on top. Microwave for 8 minutes. Remove from microwave and let cool. This helps the shuck and strings to come off easier. Once removed, cut the corn off of 2 ears and place in bowl with beans. I didn't measure my spices. I just added until I got the flavor just right.(Everyone has their preferences.) Mix all of the ingredients together. When the sweet potatoes are soft, they can be removed from the oven. Slice and open them like you would a baked potato. Add the corn/bean filling and top with cheese.<br />

I have to admit I do have a sewing machine that I got from her but I am terrified of it. I am so scared that I'm going to sew my fingers in it. My first day off yesterday was wonderful. Chris and I got up and had coffee together-its the little things-and talked about how much Good Friday meant to us. I remember in high school my church would have a mid-day service that I would attend. Sometimes we get so caught up in our own lives that we forget what a huge sacrifice was made for all of us. Tomorrow we celebrate a risen King. Death has lost its sting. When we die, we don't have to be afraid because we will soon see our Savior.<br />
<br />
For our first recipe, I'm going to share my Butterfinger cake. I made this last Friday for my church's Eggstravaganza cake walk on Saturday. I totally forgot to take a final picture though. So please forgive me :)<br />

Ingredients:<br />
1 cake box mix(I used Butter Pecan)<br />
2 bags mini Butterfingers<br />
4-5 cups powdered sugar<br />
1-2 tsp vanilla<br />
1 8oz cream cheese<br />
1 stick butter<br />
<br />
Preheat oven to 350 degrees. Prepare box cake mix as directed. Once mixed thoroughly, crush around 20 Butterfingers and stir into cake mix. Separate between 2 greased cake pans and bake according to box. The cake is complete when a toothpick is inserted and removed clean.<br />
<br />
Let cake cool completely. While it is cooling, you can mix together the icing. Cream softened stick of butter and cream cheese together in a mixer. Once fluffy, add in vanilla extract. Mix. Slowly add in the powdered sugar cup by cup. Crush 18 Butterfingers and fold into icing.<br />
<br />
You are now ready to ice your cake! Be generous with your icing, and be creative. I decorated the edges and center of my cake with the leftover Butterfinger pieces. I hope you all enjoy this recipe. There is always a first and I believe always a way to improve. Next time, instead of cream cheese, I'm going to use peanut butter.<br />

While that one is cooling, place the other one in the microwave. While #2 is cooling, cut #1 in half and scrape out the pulp and seeds from the middle. Here comes the fun part! Using a fork scrape the inside out. The inside starts to string and look like spaghetti noodles. Use about half as the bottom layer. Place tomato slices on top. Sprinkle pepper. Pour enough marinara to cover and top with 1/3 mozzarella and as much Parmesan as your desire. Layer until you have used all of your squash. Top with marinara and cheese. Bake uncovered for 25-35 minutes. </div>

Break 1 1/2 sleeves or oreos. Place the M&M's and Reese's into a bowl separately. This way you are prepared for when you melt the chocolate.<br />

Put 1 box of chocolate into the microwave for one minute. Remove and stir. Place back into microwave and heat for 30 seconds. Remove and stir. Pour 2/3 onto wax paper and use knife to thin out a layer. Sprinkle candy, Oreos, and sprinkles over chocolate. Using a fork, drizzle remaining chocolate over the candy so that it melds together. Repeat until you have used all of the chocolate. Place into refrigerator until hardened. Break into pieces and you're finished! Easy, quick, and delicious!!<br />

Last week, I wanted to make something that everyone could enjoy as a treat and not worry about. Last summer, I came across a recipe for a weight watchers pie. It was around my Nanny's birthday, and her favorite pie is key lime. It was perfectly delectable. Since I love easy recipes, I knew this pie would be a great idea.<br />

When I was going through the recipe last year, I didn't know exactly how much yogurt I needed. I got one of the key lime 6 packs,and used 4. <br />

Last week, I made strawberry key lime. My goodness! It was refreshingly light and creamy. Did I mention easy?<br />

There is nothing wrong with a hot dish coming out of the oven, especially when its called Hot Cheesy Bean Dip. </div>

Place on baking sheet with seam side down. Space rolls about 1-2 inches apart. Bake for about 15 minutes or until golden. </div>

Chop the cauliflower in mini florets. Place handful of florets into egg and then into the dry mixture. Once coated, place in greased casserole dish. </div>

Preheat your oven to 350 degrees. Spray your muffin tins with non-stick spray. Next, take 1/12 of the dough. Flatten it and place an Oreo in the middle. Wrap dough completely around the cookie and dip in the sprinkles.<br />

Place in the greased muffin tin. 1 roll of dough made a dozen cookies. Bake for 15-17 minutes. You want the edges to be golden and the center set. Enjoy!!<br />

Because I've been working so much, I haven't posted any new recipes lately. That all ends today. The best part, you ask. I have TWO! Two recipes that are to die for!<br />

The first one....Brown sugar chocolate chunk cookies. I have made this recipe before, and I adore these little delights. The original recipe is from <a href="http://bakingbites.com/2011/01/brown-sugar-chocolate-chunk-cookies/" target="_blank">Baking Bites</a>. This one batch of dough makes about 36+ cookies. You will need it to make that much because these won't last long once they come out of the oven.<br />

Mix the liquid ingredients together first. Then, add the salt, baking soda, and brown sugar. Once thoroughly mixed, slowly incorporate the flour. After the wet and dry ingredients are mixed, add the chocolate chunks. I used the entire bag in my dough. You can never have to much chocolate. </div>

Preheat your oven to 350 degrees. I used two baking sheets to make all of these. So once one batch was finished baking, I could pop another once in the oven. Spray your baking sheets with non-stick cooking spray. I used a spoon for my measurements, and dropped the spoonfulls of dough onto the baking sheets about two inches apart. Bake for twelve minutes or until the edges of the cookies are golden brown. </div>

Recipe Number 2: Homemade Sweet Potato Mash</div>

I have to admit that with this recipe, I do not have measurements. I truly felt like a cook yesterday because I added ingredients until I had the right taste and texture. </div>

First, I started with 4 large sweet potatoes. While I washed and sliced the potatoes, I had a pot of water getting ready to boil. I have noticed in the past that when you slice the potatoes, they do not take as long to soften when you boil them. </div>

Once the potatoes are sliced and the water is boiling. Boil the potatoes until the are soft. Stir occasionally. </div>

Remove from the stove and drain the water. I then put the potatoes in a giant bowl and grabbed my potato masher and got to work! Can I just say that that tool is the bomb?! I added about a cup of butter and 3 tbsp milk and continued to mash. Once I felt like the potatoes had the consistency I wanted, I added around a cup and a half of brown sugar and 5 tbsp cinnamon. Stir together. Depending on how sweet you want your sweet potato mash, add more brown sugar. </div>

I wasn't sure when I was going to make it, but its in the crockpot so I couldn't pass it up.<br />

I showed Chris the recipe, and he was all over it! Perfect for a birthday dinner!!!<br />

So, I headed to our Publix to get his cake(that I secretly ordered) and the ingredients for our delicious dinner.<br />
<br />

<b>Ingredients:</b><br />
- 3 boneless chicken breasts (cooked and chopped – I chopped my very fine)<br />
- 1 Cup Frank’s Red Hot Buffalo Sauce<br />
- 828ml of pasta sauce( 1 big can and then some of another one)<br />
- Uncooked lasagna noodles<br />
- Tub of Ricotta Cheese<br />
- 1 cup of shredded cheddar cheese<br />
- 1 cup of shredded mozzarella cheese<br />
- 1/4 cup of water<br />

<b>Directions:</b><br />
- In a bowl combine the chicken, buffalo sauce & pasta sauce <br />
- Spray your 5 qt slow cooker with non stick spray<br />
- Cover the bottom of the crockpot with a layer of the sauce<br />
- Add a layer of noodles – you will need to break them up. We like lots of noodles so we doubled up on this step<br />
- Spread a layer of ricotta cheese across the noodles<br />
- Add bell peppers<br />
- Top with cheese<br />
- Repeat the layers until you run out of ingredients.<br />

I had the idea to add Oreos to a cake mix before, so why not today? Cookies and candies are perfect compliments to a cake mix.<br />

Preheat oven to 325. I used 2 9 inch pans and if I had turned it up to 350, the cake would have burned.<br />

Ingredients for cake:<br />
oreos<br />
1 white cake mix(with all ingredients to make batter)<br />
<br />
All I did was make the cake batter in my stand mixer. Once that was thoroughly mixed, break apart one sleeve of oreos and add to the batter.<br />

Bake for around 20 minutes. Once a fork comes out clean, the cakes are finished.<br />
<br />
Oreo icing:<br />
I got this recipe from <a href="http://www.yourcupofcake.com/2012/05/cookies-cream-cupcakes.html" target="_blank">Your cup of cake</a>. She has an amazing blog filled with delicious goodies. Check her out!<br />
<br />
1/2 cup butter(1 stick) softened<br />
8 0z cream cheese softened<br />
2 tsp vanilla extract<br />
4-5 cups powdered sugar(my consistency and taste was perfect at 4 cups)<br />
crushed oreos <br />

Cream the butter and cream cheese together. Once fluffy add in the vanilla.<br />
*I kept my mixer on low for this next process*<br />
Add powdered sugar in one cup at a time<br />
<br />
You can gradually crank up the speed once you have added as much. Lastly, crush about one sleeve of oreos and add to the mixer. Allow them all to combine for about 30 seconds and your icing is complete!<br />

Ice you cakes and top with your favorite goodies!<br />

My spiritual gifts are shepherding and mercy. They are wonderful gifts. I have a continuous tender and compassionate heart. It makes me love my job and my patients more. But like any job, I got worn out physically, mentally, and emotionally. Thank you God for restoration!<br />

After I finished my shift on Friday, my precious hubby had everything ready to go so when I got home, we could leave for my parents house. Mom always wants me to cook something :) I'm used to making dessert while I'm there so this weekend was a little bit of a surprise with me actually making an appetizer: the cheddar bacon ranch bread.<br />
<br />
This is incredibly delicious, savory, and addictive!<br />
<br />
Ingredients:<br />
1 loaf round bakery bread<br />
2 cups shredded cheddar cheese<br />
3 oz bacon bits(I used turkey bacon)<br />
1/2 cup melted butter<br />
1 tbsp ranch packet<br />

Preheat oven to 350. Place aluminum foil on a large baking sheet. For the first 15 minutes, the bread will be covered in foil. It's easier to go ahead and have it under the bread. Place the bread on top of the foil and use a serrated knife to cut length wise and width wise 1 inch cubes. Cut about 3/4 way through the bread. Not completely through the bottom.<br />
<br />
Next, take bits of the shredded cheese and place it between the slices. Spinkle bacon bits between and on top of bread. Now, melt the butter and add the 1 tbsp ranch packet to it. Pour mixture all over bread.<br />
<br />
Cover with aluminum foil and bake for 15 minutes. Uncover the bread and bake for another 10 minutes. Enjoy!!<br />

1 roll of chocolate chip cookie dough<br />
1 box funfetti cake mix(with all ingredients to make cake batter)<br />
2 deep dish frozen pie crusts<br />

Buttercream:<br />
2 sticks butter at room temp<br />
3 cups powdered sugar <br />
1-2 tbsp whipping cream<br />
1 tsp vanilla extract <br />

Preheat oven to 350. Split roll of cookie dough in half and press each half into each pie crust. Next, make cake batter according to box directions. Split cake batter between pie pans. Bake in oven for 25-35 minutes.<br />

*Cakes will puff and brown. I turned my oven down to 325 and let it bake longer. Make sure you let the pies bake completely. They are finished when you can poke the middle with a fork and get nothing back.*<br />

While the pies are cooling, whip up the homemade buttercream. The butter here is very important. You have to use regular butter. My first attempt turned out liquid because I used a light butter.<br />

Lifegroups are small groups and there are 4 levels to them. 1. being more of a game night/food get together and 4. being deep spiritual discussions. Chris and I lead a Level 2 this semester, and we are loving our group!<br />

I get excited because I get to make a little delight this week. This time I was between 2. Either a cheddar, bacon, ranch pull apart bread OR taco pizza. Well, like any good wifey, I discussed it with Chris. He wanted taco pizza. Can you guess which one won? :D<br />

Here's the ingredients:<br />
<br />
2 packages Pillsbury crescent rolls<br />
1 can refried beans(we used the jalepeno kind)<br />
3 Roma tomatoes diced<br />
1 small can black olives<br />
1 lb lean ground beef(you can use chicken or turkey)<br />
1 package taco seasoning<br />
1 package 2 cups Mexican cheese shredded<br />

Preheat oven to 375. Spread crescent rolls onto sprayed baking sheet. Spread the edges of the crust onto the edges of the baking sheet to make a crust. Bake for 11-13 minutes or until golden. My oven baked them golden delicious at 7 minutes.<br />
<br />
While the crust is baking, brown the meat, drain, and add in the taco seasoning packet.<br />
<br />
Place the refried beans in a microwave safe container and warm in microwave. Spread a thin layer onto the pizza crust. Follow with the meat, olives, tomatoes, and cheese. Bake in oven for another 3-6 minutes until the cheese is melted.<br />

The day passed like any other day. It wasn't until Daddy came home early from work that I knew something was wrong. Something in his eyes gave him away. Immediately he turned on the tv, and what I saw next changed my life forever. What I saw was rubble. Rubble from two towers that that morning stood proudly. Rubble that became a grave to many mommies, daddies, brothers, sisters, aunts, uncles, cousins, grandparents, best friends, etc. The following days were filled with news updates, replays of the attack, and interviews with witnesses. It seemed like a permanent wound was opened to our American hearts. BUT the dream is still alive. God has prevailed, and His glory is still shining. He placed a dream and a will in so many men and women's lives that are today still fighting for the freedom that our forefathers fought for. I am very proud to be a member of this nation, and today my heart goes out to the men and women and their families who lost loved ones that day, during our war, and those who are still waiting for their loved ones to come home.<br />

Stuffed Pepper Casserole<br />
<br />
1 lb ground turkey<br />
1 24 oz marinara. We used Newman's Own Sockarooni sauce<br />
2 cups brown rice<br />
2 cups Mozzarella cheese <br />
3 cloves minced garlic<br />
salt to taste<br />
1 tsp onion powder<br />
2 green peppers<br />
<br />
Preheat oven to 350 degrees.<br />
Brown ground turkey and drain. Chop the peppers, and add peppers, onion powder, and salt to the turkey. Cook on low until peppers are soft. In another pan, add 2 cups brown rice to boiling water. Once the rice is soft, drain the remaining water. <br />

Combine. Sprinkle remaining cheese on top and bake for 25 minutes or until cheese is golden. <br />

I woke up this morning to my precious Tedi prancing down the hallway, jumping onto our king size bed, and pouncing on me until I decided I was going to get up :) How I LOVE my Maltese!<br />

I had my traditional coffee. I am out of stock of my staple 1 overfilled cup Cheerios and cup of Kroger yogurt, but my oatmeal was just as enjoyed. You can't forget about my WHNT in the morning either.<br />
<br />
One of the highlights of my morning was finding Zumba on youtube.It's the little things in life really. I think I have found my new past time.<br />
<br />
Chris and I enjoyed a night out for dinner at one of our favorites, THE Chick Fil A, and then went grocery shopping. He was at work on Wednesday and found a recipe for Irish Soda Bread that Ina Garten made, so I made sure we added all of our missing ingredients to the list.<br />
<br />
Did I mention that we didn't get home until 0830? So.....ingredients mixed, dough kneaded, and placed in the oven by 0850. AND there is flour ALL over our kitchen. Another reason why I love my husband :)<br />

I can't even being to tell you how amazing this aroma is! Three things in life that the aroma will make anyone stop: 1. Brownies 2. Icing(at least for me) 3. homemade bread.<br />

Here is where Chris and I got the recipe from. If you have never seen her show, I highly recommend it. She is wonderful.<br />
<br />
4 cups all-purpose flour, plus extra for currants<br />
4 tablespoons sugar<br />
1 teaspoon baking soda<br />
1 1/2 teaspoons kosher salt<br />
4 tablespoons (1/2 stick) cold unsalted butter<br />
1 3/4 cups cold buttermilk, shaken<br />
1 extra-large egg, lightly beaten<br />
1 teaspoon grated orange zest<br />
1 cup raisins<br />

Preheat the oven to 375 degrees F.</div>
Combine the flour, sugar, baking soda, and salt on low with an electric mixer. Add the butter and
mix on low speed until the butter is mixed into the flour. Mix the buttermilk and egg together in a separate bowl. Turn your electric mixer back on and slowly add the buttermilk/egg mixture. <br />
One well mixed, combine the currants with 1
tablespoon of flour and mix into the dough. It will be very wet.<br />
Dump the dough onto a well-floured board and knead it a few times
into a round loaf. Spray baking sheet with Pam and sprinkle with flour. Place dough on baking sheet and bake for 45
to 55 minutes. <br />

Our loaf was finished earlier than 45 minutes. I would say ours had a hollow sound after 35 minutes of baking. We also forgot to cut an x in the top of ours. <br />

Yesterday I had a beach wave put in my hair, and I am so excited to be able to wash it and fix it for the first time tomorrow. BUT it doesn't end there! Sometime this morning, a very nice package will arrive, and Chris and I will be going to Huntsville to pick up my first car that I will be paying for!!!! I am completely overwhelmed and excited that I haven't been able to sleep :) I was up at 5:30 this morning. OUCH!<br />

I know, I know. It's Saturday, but when you have the excitement of a check AND the first Alabama game of the season who can sleep? I decided since I was already awake why not go ahead and make the crimson dip for the Alabama football party tonight at my brother and sister-in-laws.<br />
<br />
This recipe is extremely easy and quick. I'm sure it's going to be a hit tonight!<br />

Ingredients:<br />
1 8oz cream cheese<br />
1 box Red Velvet Cake<br />
2-3 cups powdered sugar<br />
1/2 cup butter<br />
3-4 tbsp milk<br />

In a stand mixer(or a bowl), cream together the cream cheese and butter. Once they are mixed well, add 2-3 cups of the cake mix, and between each added cup add 1 tbsp milk. Slowly, one cup at a time, add the powdered sugar. Again, between each cup added, add 1 tbsp milk.<br />
<br />
*The most helpful tip I can give is that this dip is all about texture and sweetness. If you are happy with less milk and a thicker dip, I would suggest only adding the 3 tbsp. I added the full 3 cups of powdered sugar and 3.5 tbsp of milk. It is a pretty thick dip, but in my personal opinion this one should be thicker.*<br />
